Tuesday

Shrove Tuesday is one of my favourite days of the year: the only day where it's acceptable to eat a copious amount of pancakes. If you love pancakes as much as I do, and have an appetite as large as mine, you'll know how liberating this is.

There's one recipe I always turn to for perfect traditional English pancakes which is this one, but I use dairy free milk and butter. I have my pancakes with a squeeze of lemon and a sprinkle of sugar, Orlaith has hers with syrup, and we wash it all down with a pot of Earl Grey tea. And of course we boycott the cutlery and tuck in with our hands.

Unfortunately last week I broke the screen of my laptop, which is why I've been absent on here. In one way it really made me realise that I spent way too much time on the computer. I definitely missed it. But during my laptop free days I spent so much more time with Orlaith than usual, and I got a whole lot more studying done that usual. It's really taught me a lesson.

I'm getting my laptop back this evening from the repair shop but in the spirit of lent I won't be using it. The only things I will use it for in the next month are to blog (which I usually spend one day a week doing), and when i need to research/print material for university. I'm excited about the challenge :)

    Your pancakes look gorgeous, they are totally one of my favourite things.. but I never seem to make them as good as my mum does!!!

    1. try the Delia recipe I mentioned (I forgot to include the link earlier but it's up now) and you are guaranteed to have perfect pancakes !! I have never had a bad batch using it :)

  2. Good luck with your challenge. It sounds like it will be a fulfilling time with Orlaith and getting schoolwork done. I've been enjoying the little glimpses into your days. They are beautiful, tender moments.
